Zesty Broccoli Slaw

Ingredients:

  • 1½ pounds fresh broccoli *

  • ¾ cup cider vinegar

  • ¾ cup vegetable oil

  • 1 clove garlic, pressed

  • 2 teaspoons dried dill weed

  • ¾ teaspoon salt

  • *1 (16-ounce) package fresh broccoli, carrot, and red cabbage slaw mix may be substituted for fresh broccoli.

Directions:

Remove broccoli leaves, and cut off tough ends of lower stalks; discard.

Wash broccoli. Remove flowerets. (Reserve flowerets for another use.)

Cut stems into thin strips; place in a medium bowl.

Combine vinegar and remaining ingredients; pour mixture over broccoli, stirring gently to coat.

Cover and chill for at least 2 hours.

Drain before serving, or serve with a slotted spoon.

Yield: 6 servings.
